4th of july bar-b-q

I am kinda ashamed of my small pit. The cooking area is only 6 feet 9 inches long and 29 inches across. The smoker only has 2 - 24 inch trays. The firebox is only 2 feet 6 inches long and 24 inches in diameter.

For the 4th I cooked 2 briskets over night, the next morning I put 2 racks of ribs on, along with a package of boudain, sausage, and a couple of packs of chicken quarters.

The truck is my son in laws 1 ton chevy.

The sliding tray above the ribs (holding the chicken) is only 2 feet 6 inches long and about 10 inches across. It can only hold 10 pounds of chicken quarters or 3 racks of baby back ribs. The briskets are in the foil. They were cooked for about 12 hours, 3 of that the meat was exposed to the smoke.

I think I need a bigger pit, what do yall think?? I thought about buying a dual axle trailer and putting 2 of these pits side by side. That would give me a cooking area of about 13+ feet in total length and about 58 inches across. That might be big enough if I put a second smoker on the front.

Oh well, this little pit will have to do for now.

that was holiday before last. I did not know there was a limit on the number of bar-b-qs I could have???

I did skip posting the bar-b-q pictures from my buddies wedding. We cooked for about 50 - 60 people, including 30 pounds of chicken, 5 pounds of boudain and 100 pounds of crawfish. I did not cook the crawfish though.

I did skip posting the bar-b-q pictures from my buddies wedding. We cooked for about 50 - 60 people, including 30 pounds of chicken, 5 pounds of boudain and 100 pounds of crawfish. I did not cook the crawfish though.

I wish I had a plate of it right now. Yummy to my tummy BBQ. I havent grilled out or smoked anything (meatwise) for a very long time. I am more of a stove electric element cooker myself.

Smoke em' if you got them.
