As a classical guitar enthusiast (I intend to study it at university, I'm preparing my audition now) I have many favourite pieces.
Bach's Chaconne in D Minor for Violin (Arranged for guitar by Segovia) Part 2 Sor's 'Variations on a Theme by Mozart' Giuliani's 'Variations on a Theme by Handel' (One of my audition pieces) And the piece which the previous one is derived from, Handel's 'The Harmonious Blacksmith' In terms of orchestral stuff, this is a favourite of mine: Giuliani's 'Concerto for Guitar and Orchestra' (Part 1, there are 3 others) And possibly the most evil sounding piece of music ever: Bach's 'Toccata and Fugue' for Organ And many others, but I doubt anyone will watch them. If you want more contemporary stuff I highly suggest music by Eric Whitacre, movements like Sleep, Lux Aurumque, Cloudburst, and October are really great...you should also look up O Magnum Mysterium performed by the Chanticleer Choir, good stuff.

In no particular order, I like Bolero, by Ravel; Requiem, Pachebels Cannon (duh) by Mozart. And a bunch of others, obviously.
Oh, In the Hall of the Mountain King by Grieg. As far as the classical style goes, my favorite composer is Nobuo Uematsu.
