Bar-b-q this past weekend

A good bar-b-q starts a day or two ahead of time. This one is already starting late.

I forgot to pull the ribs and back strap out of the freezer. So the meat was soaked in hot water to speed up the defrosting. I would prefer letting the meat defrost on its own, but you gotta do what you gotta do.

The ribs were cut in half, covered with the same spice that is on the back strap, beer was added and put into a pot. My wife is the pouring the beer into the pot.



I really prefer a plastic tub so it can be flipped to cover the meat equally. But all of these ribs will not fit into the plastic tub we have.



The pit was fired up around 11 am, which means I was running late again. That morning, my son and I made a trip to the camp to shoot his shotgun and pick up some wood for the smoker.

The ribs wet on around 12 noon, we are planning on eating at 4 so that gives them a 4 hour cook time. 4 hours is like the bare minimum for cooking ribs.

In the below picture, in the foil is chicken, deer sausage, ribs, deer back strap and boudain on the bottom right. Everything is cooked with real wood, no propane or charcoal. The wood is a mix of red oak, pen oak and pecan.

That is chicken in the foil. It has been cooking for about 3 hours. The sausage is made from Texas whitetail deer. My son a 6 point and I got a 9 point this past hunting season. The sausage looking things on top are boudain.

Looks so good.

I rarely eat meat, mum never buys it. Just the occasional suspicious looking supermarket chicken.

Like anything else, it how you prepare it and cook it.

Some people complain about the taste of wild game, that is because we are used to eating cows raised on commercial feed. Our ancestors ate wild game for tens of thousands of years, its in your genetic code to eat deer and anything else you can kill.

Deer has very little fat on it compared to beef or even chicken. So it comes off as a little dry. Most people fry their deer eat, or cook it in a crock pot to make a stew. Chili is a good way to use deer burger, or make it into taco meat. Most of my deer burger is mixed 1/2 and 1/2 with beef. We use deer in all kinds of food - everything from burgers, to tacos, to chili.

Deer is the best meat you can get, just about. Deer chili, deer jerky, and deer steaks are great. I've found deer to be a little sweet, which is great in a chili or as jerky. I've never had deer sausage, but I assume they are great.

I've tried rabbit before and really liked it. The only problem I had the last time it was prepared the bones broke off into the rest of the meat and I spent most of my time picking bones out of my teeth. ...But the meat was good.

My roommate shot an elk over christmas break so I had that for the first time. It's quite good, much like deer but more fat. yum.

I seem to recall reading, recently, that grass fed Bison is actually leaner than deer, chickens, etc....shocking really...

Elk is great, one of my favorites. Beaver, Alligator, Kangaroo, and Emu are also really good.

Deer eat corn off of farmer's fields (sock in mustards). When visiting family in Oz, I had some kangaroo steaks. They were actually quite good.

Regarding chicken, did you buy that or raise it yourself? Most of our birds we raise, on starter feed and then cracked corn. Muscovy duck baked with a nice merlot is simply awesome.

PS You'd better have had kraut with those dogs... or I will hunt you down and kill you. Kraut + them + ketchup + relish + mustard = WIN.

Fox, the article was comparing grass fed Bison to , wild deer, free-range chicken and other equivalents. I didn't seek out other articles for corroboration and it's always possible that this was a "puff piece" commissioned by a Bison Industry PAC...but the fact is that nearly anything range/grass fed is going to be leaner and better for you than animals reared in a factory production facility.

Excellent point there, especially with free-range birds. Wild deer do tend to get their hands on corn though depending on the area.
