Stupid question but..

How do I uninstall? I didn't see an uninstaller come with it and I'm paranoid that If I just delete the directory in the SteamApps folder I will miss some files (Registry entries and whatnot...)

Actually, that is pretty much how SteamApps work.

I remember I downloaded some mod... what was it, Flipside I think? I tried it and I did not like it. I turned off Steam, deleted the directory, and it was gone from my Steam games list.

There is really nothing in the registry. One of the few nice things about Steam I guess.
